Herb Infused Potato Chips

This recipe is so easy. It's just like frying up normal potato chips but this time they will taste so yummy. I only had rosemary and garlic when I tried this but you could add anything you feel like, throw in your favorite herbs. Here's how to make them taste the best...

First start by filling a large pot that can be used for frying, half full of vegetable oil. Add your favorite herbs into the cold oil and bring it all up to temperature for frying which is at about 350.
Preparations for the potatoes are to first cut thin slices. I use my Kitchen Aid attachment because that's what I have to cut them with but if you have a mandolin it might work better. Rinse your potatoes well and then dry them well on paper towels. There are two reasons for this. The starch in the potatoes keeps them from getting nice and crispy and if they are not dried well they will splatter oil all over the place. Oil and water don't mix! When the oil is ready, remove the herbs and fry your potatoes for approximately 3-5 minutes. Test the first batch for time and doneness and remember that your oil will drop in temperature which will do two things if it drops too much. Take longer to cook and maybe drop so much that it will only make them soggy and not crispy. Don't add to many chips at a time, basically don't crowd your pot. As they come out dry them on paper towels and salt and pepper or just salt if you're me! Enjoy, I did.
