saw this recipe on a TV show and wanted to try it. I am so glad I did. I loved it and have made it a few times since. The presentation is amazing and the garlic is so yummy.
Here's how the recipe goes:
6-8 Small Red Potatoes
3-4 Cloves Garlic
2 Tbsp Extra Virgin Olive Oil
Sea Salt or Table Salt if you don't have sea salt
Fresh Cracked Pepper
Preheat your oven to 400*. Cut slits approximately 1/8 inch apart only cutting 2/3 the way down. DO NOT CUT ALL THE WAY THROUGH. Thinly as possible slice the garlic and stuff 3 or 4 slices of garlic into the slits of the potato. You might need a knife to separate your slits. Once all of the potatoes are stuffed, roll each potato in olive oil and place in a bake safe pan. I usually pour the olive oil in the pan I am going to bake in and roll the potatoes around in the pan. Then crack pepper and salt over the top of the potatoes and bake for 1 hour. Serve just like a baked potato with butter or the works. This recipe is great for three to four people as a side dish and it looks to impress!
